The permitted levels of sulphite are much lower in organic wines. The decision to source organically reflected our belief that we could find wines made with grapes with a higher quality than those grown using conventional methods. With organic wines the vines become more self-sufficient and naturally balanced we have seen a greater depth of flavour and improved mouthfeel in organic wines. The vines themselves can adapt to seasonal variations, which result in consistently healthy, and well balanced grapes. There is no use of chemical herbicides, pesticides or fertilizers in an organic wine. This allows the true fruit character and natural benefits of the land to shine through in the wines.

A triumph of
mother nature, organically grown and naturally fermented, this wine’s complex
layers deliver rich and full-bodied flavours to the palate, with a tightly
structured minerality typical of the clone. Abundant flavours of stone fruit and citrus with hints
of nuts, the finish is beautifully supported with elegant oak and good acidity.
Grown in European style high density planting,
using top quality Burgundy clones. This elegant Pinot Noir displays aromas of dark cherry,
floral, and a hint of spicy oak. Wild yeast fermentation has created a wonderful
array of savoury characters underlying earthy tones. The silky palate shows
rich red fruit flavours, savouriness and well-integrated oak. Gentle acidity
and fine tannins give this wine great balance and structure promising longevity.
The grapes are handpicked then gently whole bunched pressed. 30% is fermented in old barrel using wild yeasts giving the wine greater depth and complexity. 70% is fermented in stainless steel using cultured yeast to capture the lively fresh aromas and fruit purity. Four months yeast lees contact adds weight and richness to the palate. Cellaring potential – drinks well now and will mature gracefully over several years...
